Pizza Sauce, 3 Ways
All sauces come directly from Ken Forkish’s The Elements of Pizza, which is an excellent book for learning about pizza.
Simple Sauce Ingredients:
- 1 twenty-eight(28) ounce can of whole tomatoes
- 8 grams of fine sea salt
FWSY Sauce Ingredients:
- 1 twenty-eight(28) ounce can of whole tomatoes
- 20 grams of good quality extra virgin olive oil
- 1 clove of garlic, chopped
- 8 grams of fine sea salt
- 0.3 gram dried oregano
- 0.4 - 0.8 gram dried chile flakes
Vodka Sauce Ingredients:
- 1 batch of FWSY Sauce (above)
- 75 grams of vodka
- 50 grams of heavy cream
- 5 grams of Grana Padano or Parmigiano-Reggiano cheese
Simple Sauce Instructions:
Pour tomatoes and salt into blender
Pulse until chunky. Don’t over blend as it will make the sauce too watery.
Pour into container. Sauce saves for 1 week in the fridge.
FWSY Sauce Instructions:
Put the olive oil, garlic, salt, oregano, and chile flakes in a blender. Add just a spoonful of tomatoes and blend until the garlic and oil have emulsified.
Add the rest of the tomatoes and blend by briefly pulsing the blender until all ingredients are combined. If you overblend the sauce will be too watery.
Pour into container. Sauce saves for 1 week in the fridge.
Vodka Sauce Instructions:
In a saucepan over medium-high heat, reduce the vodka until about 2 tablespoons remain, about 4 minutes.
Pour in the cream and cook gently over low heat, stirring occasionally, for 1 to 2 minutes.
Add the FWSY sauce and cheese. Raise the heat to high until the sauce starts to boil, then reduce to medium-low and simmer.
Simmer for 30 minutes making sure the sauce does not boil.
Pour into container. Sauce saves for 1 week in the fridge.
