Graham Crack
A Fox family favorite.
Ingredients:
- Enough graham crackers or digestives to cover the pan
- 1 cup unsalted butter
- 1 cup light brown sugar, packed
- ½ teaspoon salt, or to taste
- 2 cups semi-sweet chocolate chips
- 1/3 cup toffee bits (optional)
- 1/3 cup of crushed almonds or peanuts (optional)
- Preheat oven to 350F
- Line a 9×13-inch pan with aluminum foil and spray with cooking spray.
- Place crackers or digestives into a single layer on the pan, covering the buttom entirely.
- In a saucepan add butter, brown sugar, salt. Heat over medium until melted, stirring constantly.
- Cook for 4-5 minutes, stirring constantly to avoid burning. Mixture should soon resemble a caramel.
- Pour mixture over crackers.
- Bake for 7 minutes, until the edges bubble.
- Remove from oven, cover the top with chocolate chips, return to oven to bake for about 2 minutes or until chocolate has melted.
- Once removed, you can optionally top with toffee bits or peanuts.
- Let cool for 2 hours, until chocolate has set.
