One Pan Mediterranean Baked Halibut
Mom really likes this recipe.
- Zest of 2 lemons
- Juice of 2 lemons
- extra virgin olive oil
- ½ cup (total) of chopped fresh herbs (choose one or more: thyme, dill, oregano, tarragon)
- kosher salt, more for later, to taste
- fresh ground black pepper, to taste
- ½ to ¾ tsp red pepper flakes
- 1 lb fresh French beans or asparagus
- 1 lb cherry tomatoes
- 1 ½ lb halibut fillet, slice into 1 ½-inch strips
- Preheat the oven to 450 degrees F.
- Chop herbs, halve tomatoes, remove stalk bottoms of (and optionally peel, if thick) asparagus
- Arrange veggies, herbs, and fish in a single layer in a rimmed baking sheet.
- Drizzle with olive oil and lemon juice, turning to coat.
- Season with salt, pepper, red pepper flakes, and lemon zest.
- Bake in the 450 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3-5 minutes, watching carefully. The cherry tomatoes should begin to pop under the broiler.
- When ready, remove the baked halibut and vegetables from the oven. Serve immediately.
