One Pan Mediterranean Baked Halibut

Mom really likes this recipe.


  • Zest of 2 lemons
  • Juice of 2 lemons
  • extra virgin olive oil
  • ½ cup (total) of chopped fresh herbs (choose one or more: thyme, dill, oregano, tarragon)
  • kosher salt, more for later, to taste
  • fresh ground black pepper, to taste
  • ½ to ¾ tsp red pepper flakes
  • 1 lb fresh French beans or asparagus
  • 1 lb cherry tomatoes
  • 1 ½ lb halibut fillet, slice into 1 ½-inch strips

  1. Preheat the oven to 450 degrees F.
  2. Chop herbs, halve tomatoes, remove stalk bottoms of (and optionally peel, if thick) asparagus
  3. Arrange veggies, herbs, and fish in a single layer in a rimmed baking sheet.
  4. Drizzle with olive oil and lemon juice, turning to coat.
  5. Season with salt, pepper, red pepper flakes, and lemon zest.
  6. Bake in the 450 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3-5 minutes, watching carefully. The cherry tomatoes should begin to pop under the broiler.
  7. When ready, remove the baked halibut and vegetables from the oven. Serve immediately.
